Assorted Chicken Pieces (or Lean Pork)
Onion, chopped in large chunks.
Vegetables: Asparagus, potatoes, green bell peppers, carrots, mushrooms, broccoli, summer squash,anything in season that you enjoy.(Use your imagination)Seasoning to taste
Brown your chicken parts in a bit of olive
oil in a non-stick pan. Add chopped onions and cover, lowering heat.
Cook until 3/4 done.
Add chunked up veggies, in sizes to allow even cooking. Simmer until the vegetables are done to your liking, usually about 5-8 minutes. Season and eat!
This dish has a gravy of it's own by the time all is cooked. one pan, one dish, one fork and knife and lots of imagination!
My total cooking time: 25 minutes
note: you can use meat from smoked turkey, or ham, but adjust your cooking time to only the veggies, since the meat only needs to be heated.
